Chicken Spinach and Prosciutto Bundles (find it HERE ) with Spinach, Strawberry and Avocado Salad (find it HERE ) How easy was it to make?   I have realized why people eat chicken so much... because its pretty easy to cook (after you get over the touching raw chicken thing, which I am doing really well at). I think now is the time to point out how NOT boring eating Paleo is. Now we could slap chicken and beef on a plate every day, but WHY?! There are so many great recipes out there. Give some of them a shot, one or two days a week make something out of the norm. Too many and you might get overwhelmed, but just TRY it sometimes. You wont be sorry (most of the time). Now, back to the question, it was pretty easy. I cut the fat off the boneless skinless chicken breasts and arranged them on the wax paper first, than did the mushrooms. January 13, 2012 It could be a good thing, it could be a bad thing. Sometimes it gets me in trouble and sometimes its the best quality that I have. When I was a kid, my brother hated it. As a teen, my parents werent to happy with it. As an adult, sometimes my husband cant stand it. It has caused friendships to get stronger or end. It has caused relationships to get stronger or end. It is not something that I consciously realized I did until adulthood, and sometimes, I need to thing twice before I do it. But I will tell you, I am VERY happy that it is a quality that I have. I have a big mouth. I say it like it is. Sometimes, I dont think about it before I say it (which is when it gets me in trouble usually), but sometimes, actually I think "most of the time" I am respected for speaking my mind and saying what it is I feel. I do my best not to hurt peoples feelings, start problems or cause trouble... but I will NOT let someone walk all over me, insult me, hurt someone I lov...

November 30, 2011 Today was a tough one. One of those "what doesnt kill you makes you stronger" days!! We have learned that when the WOD is posted and its for a certain amount of rounds, if there are 3 its heavier weight (usually) and if its 5, its lighter weight (usually). Today the WOD on paper even looked difficult, as most thrusters are never a good time! But, when that alarm went off I was ready to head to the gym and face the challenge! I was pleased to have company for this mornings WOD. J and T were both there. We are starting to be the "steady" Wednesday morning crew! We all got right into the warmup and got our bars set for the WOD. I knew I was going to do the thrusters prescribed. So, 80lbs right onto the bar. I also got the Rx kettle bell, 1 pood (36lbs) ready... and my silly green pull up band. There we have it, I was ready. Talk about insanity.
